Trotter's Whole Hog BBQ
Trotter’s Whole Hog BBQ, located in the Historic Downtown Sevierville, was created to define East Tennessee in the world of whole hog barbecue and to establish roots for this cooking style.
The hogs are cooked whole, low and slow. The process begins with the hog belly down while being smoked for several hours then flipped and mopped with the house-made sorghum sauce. One of Rule’s main focuses is on the smoke, as his method will implore a distinct smoky flavor that is not to be mistaken.
